Like all recipes this yoghurt, mint and Zucchini Dip came about from a simple thought process. I have waaaaaay too many lovely zucchinis (courgettes) – tick. I have tons of mint – tick.  As for coconut yoghurt……….. you kinda get the gist. This great thing about this Courgette Dip is that it requires on 5 main ingredients (Zucchini, mint, lemon, olive oil and coconut yoghurt). The others are completely optional but add that little extra something to the dip that take it from good to WOAH.

Vegan Dip

This is a light and refreshing dip that will help use up your zucchini bounty. I have kept it vegan by using coconut yoghurt. But feel free to use other yoghurts like soya yoghurt too.

How To Make A Zucchini Dip

Add courgette and garlic to a frying pan and fry till soft and starting to brown, then remove from heat and let cool. Then to a food processor and add in yoghurt and lemon juice and puree to desired consistency and adjust seasoning. Transfer to serving container and drizzle on some olive oil, garnish with mint leaves and enjoy.

Courgette Dip Tips

To make it a bit thinner add in more yoghurt and olive oil and to make it sharper add in more lemon. I have since come across versions of this at barbeques and Middle Eastern restaurants that include cumin or tahini etc. This is a great way to use up slightly larger courgettes.
